BHA and BHT: The Cereal-Box Preservatives Hiding in Your School Breakfast

Pour a bowl of cereal in the cafeteria line and you are eating more than oats and sugar. Tucked at the bottom of the ingredient list, often in tiny print, are two strings of letters that have nothing to do with flavor or nutrition: BHA and BHT. Their job is to keep the fats in processed food from going stale, and they have been doing that job in American kitchens since the 1940s.
The trouble is that one of them is now under federal review as a possible cancer risk, and the other is likely next in line. This post breaks down what BHA and BHT are, why scientists keep raising their hands about them, why they are still legal in the food your school serves, and what is finally starting to change.

What BHA and BHT Actually Do
BHA stands for butylated hydroxyanisole. BHT stands for butylated hydroxytoluene. Both are synthetic antioxidants, which sounds healthy but is not the same as the antioxidants in blueberries. In food, an antioxidant slows the chemical reaction that turns oils and fats rancid.
That is why you find them in foods built to sit on a shelf for months: breakfast cereals, granola bars, chips, crackers, dried meats, shortening, and instant-noodle seasoning. They keep a product tasting fresh long after it leaves the factory, which is exactly what a district wants when it buys food by the pallet.
Here is the part that catches people off guard. The amount used is tiny, a fraction of a percent, and it does nothing you can taste. You would never know it was there. That is part of why it has survived so long. A chemical that changed the flavor would have been argued over decades ago. One that just quietly extends shelf life is easy to forget about.
Why the Health Questions Won't Go Away
BHA is the bigger concern. The U.S. National Toxicology Program lists it as reasonably anticipated to be a human carcinogen, a conclusion drawn from animal studies where BHA caused tumors. The International Agency for Research on Cancer also classifies it as a possible human carcinogen.
BHT has a thinner case against it, but researchers have flagged possible effects on hormones and the liver in animal studies. Neither chemical is proven to harm you at the amount in a single snack. The honest answer is that scientists are not sure what years of daily low-dose exposure does, and we are not sure is a strange thing to accept about something kids eat every school day.
Other countries treat them more carefully. The European Union allows BHA and BHT only within tight limits and bans them from some products, including certain foods made for infants. When a company sells a cleaner recipe in Paris than in Pittsburgh, the difference is not science. It is what regulators there decided they were not willing to wave through.

Why They Are Still on the Lunch Tray
BHA and BHT are legal because they were grandfathered in. Both were approved decades ago and carry a designation called GRAS, short for generally recognized as safe. That label was created in 1958, and for a long time it meant a chemical rarely got a fresh look once it was on the market.
Notice what did not happen, too. California's 2023 Food Safety Act banned four additives, and its 2024 school law pulled six artificial dyes out of cafeterias, but neither touched BHA or BHT. They slipped through while the spotlight was on dyes. That is how a chemical from the 1940s ends up in a 2026 breakfast.
What Is Finally Changing in 2026
In early 2026 the FDA opened a formal reassessment of BHA, the first step toward deciding whether it should still be allowed in food. The agency has said BHT and azodicarbonamide are expected to get the same review next. For the first time in generations, regulators are reopening the file on these preservatives instead of leaving them alone.
States are moving too. Watchdog groups now track food-chemical bills across the country, and the list of additives under state-level scrutiny keeps growing. The momentum that started with Red 3 and Red 40 is spreading to the preservatives that have flown under the radar far longer.

How to Spot Them and Push Back
You do not need a chemistry degree to find these. Flip any packaged food over and scan the bottom of the ingredient list, where preservatives usually sit. Look for BHA, BHT, or the phrase added to preserve freshness. If you see it on something served at your school, you have found a concrete, specific thing to ask about.
That specificity is power. An administrator can wave off the food here is unhealthy, but it is much harder to ignore a student holding an ingredient label, the National Toxicology Program's own wording, and one simple question: why is a possible carcinogen in our cereal when cleaner versions exist? Brands already sell BHA-free cereals and granola bars, so the swap is usually easy once someone asks.
BHA and BHT are a reminder that the most outdated things on the lunch tray are not always the most obvious ones. Dyes get the headlines, but these quiet preservatives have been riding along since your grandparents were kids, and only now is anyone checking whether they belong.
